Ham Loaf

Recipe: 2 lbs ground ham**
1/2 lb ground pork
1/2 lb hamburger
1 10 oz can condensed cream of tomato soup
6 oz tomato sauce (not quite all of an 8 oz can)

Mix this together. My mom taught me the easiest way... use one hand: squish it through your fingers, fold it over, repeat (think mixing mud pies when you were six). It makes a LOT, so I usually split it at this point and freeze half.

When you're ready to bake it, preheat oven to 350 F and add:
10 saltine squares (5 to each half of the mix), crushed
2 eggs (1 per half)
1 onion, diced fine (1/2 onion per half)

Mix together (again with your hand is easiest/fastest). In a glass or ceramic baking dish form 2 small loaves using half the total meat mixture.

Cover with foil and bake 45 minutes. Remove foil and bake another 45 minutes.


** I buy boneless ham and grind it with an old-fashioned hand crank meat grinder. My mom has/uses a grinder attachment on her mixer. If you have neither, you could try cubing it and pulsing small amounts in a food processor (just try not to completely puree it).
