1 small head garlic, roasted and the mashed
1 can (about 16 oz) tomatoes with juice, broken up
1/3 cup brown sugar, I use light brown sugar
1/2 cup onion, finely chopped
1/2 cup apple cider vinegar
1/2 cup dark raisins, slightly shopped
1 tablespoons molasses
1/2 teaspoon coriander
1 jalapeno, with seeds, minced
1 tablespoon lemon juice
1/2 teaspoon salt
1/2 teaspoon curry powder
1/2 teaspoon paprika
a grinding or two of black pepper
Put tomatoes with juice, sugar, onion, vinegar, raisins and garlic in a
small saucepan and simmer for about 45 minutes, stirring from time to time. Add a little water if necessary. Add remainder of ingredients and simmer, stirring occasionally, until thick. Spoon into a clean jar with lid.
Store in the refrigerator. Makes about 1 cup of chutney.
