Vegetarian (or easy fix), Other Main Dishes, Asian - Japanese, Chinese, Korean
Recipe:
For vegetarian, just skip chicken... the peanut sauce has protein and is so tasty it doesn't matter if you leave something out. I often omit (or greatly reduce) the amount of somen and use a ton of cucumber to lower the carbs.
(for 2)
Sauce
¼ c. crunchy peanut butter (creamy is find if you prefer)
2 T brown sugar (or 1 T brown sugar/1 T splenda)
2 T (rice) vinegar
2 T soy sauce
2 t sesame oil
½ t. Korean chili flakes
4 shakes Mongolian fire oil
Chicken
Poach half a chicken breast in water (takes about 15 minutes, cut into center to check for doneness). Rinse with cool water and allow to chill in water. Adding ice speeds this up. When chicken is cool, shred with a fork on a cutting board.
Cucumber
Julienne ½ - 1 cucumber, preferably European/hot-house/burpless. Peel only if the skin is really tough or waxy.
Noodles
Briefly boil two bundles of somen noodles. Rinse with cool water.
Construction:
Put noodles in bowl. Top with cucumbers, then chicken. Spoon sauce over chicken. (Best to alternate spoonfuls between bowls since the sauce isn’t completely mixed.)
