1½ c. flour
1/3 c. cocoa powder
1 t. baking soda
½ t. salt
1 c. sugar
½ c. vegetable oil
1 c. cold coffee or water
2 t. vanilla extract
2 T. cider vinegar
Preheat oven to 375. Stir together flour, cocoa, soda, salt, and sugar directly in 8"x8" cake pan. In a measuring cup, measure and mix coffee or water, oil, and vanilla. Pour liquid ingredients into pan and mix with a fork. When the batter is smooth, add the vinegar and stir quickly. There will be pale swirls as the baking powder and vinegar react. Stir just until the vinegar is evenly distributed in the batter.
Bake 25-30 minutes.
