I wrote this recipe as I watched my Aunt Kathy make her salmon patties. The great thing about these is they're easy to make like the salmon patties of my childhood, yet crispy like my Mom's salmon croquettes.
1 (15 oz) can salmon
1/2 c finely chopped onion
1 egg, beaten
3/4 t dry mustard
half a sleeve of saltines, crushed
olive oil for shallow frying
Remove (most of) skin from salmon; leave the bones in. Put in bowl and use a fork to flake. Add onion, egg, mustard, and 2-3 T of the crushed crackers. Mix. Take a small handful of mixture and see if you can press it into a patty that holds together; add a few more crushed saltines if needed. Form into four 1/2" thick patties.
Pour about 1/8" olive oil into a non-stick skillet and preheat over low heat (3 on 1-9 burner dial). Put remaining saltine crumbs in a shallow bowl and press patties into crumbs on both sides (should use most of the remaining crumbs). Fry until lightly browned and crispy. Flip and repeat.
Serve with roasted veggies and buttered noodles. Thank your aunt for serving you a tasty, sane meal amid a week of blood-sugar-busting ones!
