French Toast (95% Alton Brown's recipe)

Recipe: For 4:
1 c half & half
3 large eggs
2 T honey, warmed in microwave for 20 seconds
1/4 t salt
eight 1/2" slices day-old or stale bread
butter for frying

For the 2 of us (not huge carb-eaters):
1/3 c half & half
1 large eggs
2 t honey, warmed in microwave for 20 seconds
pinch salt
eight 1/2" slices multi-grain baguette (if fresh, slice and let sit out for 30 min-1 hour, flipping halfway to dry out a bit)
butter for frying

If you're cooking for four, preheat oven to 375 F.

Whisk together half & half, egg(s), honey, and salt. Pour into a flat-bottomed bowl or 8" pie plate.

Melt butter in a 10" nonstick skillet over medium-low heat. Soak bread in liquid for about 30 seconds per side. Put bread in skillet and cook until golden, flip and cook other side.

If cooking in batches, put on cooling rack in sheet pan and put in oven; finish cooking.

Serve with butter & maple syrup, fruit & whipped cream, peanut butter & jelly... whatever suits your fancy!
