10 oz. dates, finely chopped (can be done in food processor)
1 t baking soda (or as my grandma wrote, "soda")
1 c plus 2 T boiling water
5 T butter, very soft
1 whole egg
1 egg yolk
5/8 c brown sugar (1/2 cup plus 2 T)
1.5 t vanilla extract
1 c walnut pieces
pinch salt
1.5 c flour
9"x13" ALUMINUM pan. (Tried it in glass and it didn't work as well.)
Preheat oven to 325° F.
Put dates in a large bowl. Sprinkle baking soda on top. Pour boiling water over top and let stand 5 minutes.
Mix butter, whole egg, and yolk. Add to dates. Stir in brown sugar, vanilla, walnuts, and salt. GENTLY FOLD IN flour. Stop when you still have streaks of white. Pour into pan and bake until just done (toothpick comes out clean). Original recipe called for 30 minutes. I checked at 20 minutes (definitely not done) and again at 25 minutes (definitely done, but still nice and moist; re-check with KC oven - 24 minutes is perfect). Your oven, your challenge to find its sweet spot! :-)
Cool and serve with lots of real whipped cream!
(For you fellow Type 1's out there... this recipe has 475 g net carb for the pan... and it does not taste like there were compromises. The original had almost twice that!)
