Recipe: From one of the first cookbooks I remember Bryce whipping out! :-)

Each (obviously) requires a crust... buy a bag of dough or a Jiffy box mix at the grocery store, make your own...

Thai Chicken Pizza
Crust
Peanut Sauce
1/4 c creamy peanut butter
2 T teriyaki sauce
2 T hoisin
1 T brown sugar
2 T water
2 t sesame oil
1 t soy sauce
1.5 t minced onion
1 clove garlic, minced
1/2 t crushed red pepper flakes
1 t minced ginger

Put in small food processor and process briefly (about 15 seconds). Put in small bowl and microwave until sauce darkens, 1-2 minutes.

Toppings
Half a boneless skinless chicken breast
Olive oil
1.25 c grated mozzarella
1-2 green onions, julienned
1/2 carrot, julienned
1/2 c bean sprouts
2 t minced cilantro
1 T chopped peanuts

Slice chicken into bite-sized chunks and mix with 1/3 peanut sauce. Refrigerate at least 2 hours.

Preheat oven to 500 F. Heat small skillet to medium-high and add 1 t oil. Sauté chicken 3-4 minutes until cooked though.
Prepare remaining toppings and roll out crust for a 10” pizza.

Construct pizza. On top of crust add (in order):
Remaining peanut sauce
1 c mozzarella cheese (reserve 1/4 c for top)
Green onions
Chicken
Bean sprouts
Carrots
Remaining mozzarella cheese
Cilantro
Peanuts

Bake 10-12 minutes until crust is light brown.

BBQ Chicken Pizza
Crust
half a boneless skinless chicken breast
1/2 c Bullseye Original bbq sauce - DIVIDED
1/2 t olive oil
1 c shredded mozzarella
1/2 c grated Gouda cheese - smoked if you can find it
1/2 c thinly sliced red onion
2 t finely chopped cilantro

Cut chicken into cubes and marinate in 1/4 cup bbq sauce at least 2
hours.

When you are ready to cook, preheat oven to 500 F. Heat oil in a small frying pan and saute chicken until cooked through.

Form dough into 10" round and place on pan. Spread other 1/4 cup bbq sauce on crust. Top with (in order, starting at the crust):
HALF of the mozzarella & all the Gouda cheese
Chicken
Onions
Remaining mozzarella
Cilantro

Bake for 10-12 minutes until the crust is light brown.


Southwestern Burrito Pizza
Marinated Chicken

1 T fresh lime juice
1 T olive oil
1 T soy sauce
2 garlic cloves, pressed
2 t cilantro
1 t salt
1/2 t crushed red pepper flakes
Half a skinless boneless chicken breast cut into bite-sized pieces
Mix first 7 ingredients. Add chicken and marinate for at least 2 hours.
Other toppings
3/4 c canned refried black beans
1 T water
1/4 t cayenne pepper
1/4 c sliced white onion
1 whole canned mild green chili, julienned
1/2 c shredded Monterey Jack cheese
1 c shredded Cheddar cheese
Tomatillo Salsa (optional)
3/4 c chopped tomatillos (about 4)
3 whole canned mild green chilis (4 oz can)
1/4 fresh jalapeño
2 T chopped onion
Dash salt

Preheat oven to 500 F.
Heat a small amount of oil in a small skillet over high heat. Cook chicken 2-4 minutes until cooked through.
Mix black beans with water and cayenne pepper.
Roll out crust to 10”.
Top with, in order (starting at the crust):
Black beans
Chicken
Onions
Green chilis
Monterey Jack
Cheddar
Bake for 12-15 minutes until the crust begins to brown.

While pizza bakes, make the tomatillo salsa (if desired): Combine all ingredients in a food processor and process on low for about 15 seconds.
