Makes about 2.5 cups of mix
1 pound strawberries, hulled (3 cups)
½ cup heavy cream
¼ cup sweetener (original was honey, I subbed cup-for-cup stevia the first time)
1 teaspoon lemon juice
1/8 teaspoon salt
Process 1½ cups strawberries, cream, (sweetener), lemon juice and salt in food processor until smooth, about 30 seconds, scraping down sides of bowl as needed. Add remaining 1½ cups strawberries and pulse until coarsely chopped, about 5 pulses.
Transfer mixture to large liquid measuring cup. Pour into popsicle molds. Original recipe says it fills six 3oz molds. I filled 8+ of the nifty Ikea silicone ice pop makers (https://www.ikea.com/us/en/p/utspaedd-ice-pop-maker-pink-blue-40308352/). Freeze. (Did I really have to say that? I don't think so.) |
