Mince:
2 cloves garlic
1/4 large shallot (about same qty as garlic)
Fry livers on HIGH in 2T oil, until a bit past medium rare. Set livers aside while you:
Toss in 1T butter, garlic & shallots. Saute. Add 1 shot brandy to deglaze (watch for FIRE).
Chill
Put in cuisinart and spin.
Alternate butter & cream; 2T butter at a time. 4 to 6 total.
Plus salt & pepper to taste.
