Chocolate Oatmeal

Recipe: Oatmeal has always been a really hard sell for me... but I was inspired to try this after reading a blogger waxing rhapsodic (my people!). I shared a bite with a friend this past weekend and she nailed it -- it's reminiscent of no-bake cookies! (I expect she'll be stirring a spoonful of peanut butter into hers :-)

Serves two.

1.5 T butter
1/2 c. steel cut oats
1 c. milk
2/3 c. water (more or less, depending on your preference)
2 T cocoa powder (I've been using Dutch process recently and have convinced myself it's a little richer)
1/8 t. salt
2 T sweetener (sugar, maple syrup, honey, splenda.... I used 1.5 T splenda & 1/2 T maple syrup)

Whatever toppings make your mouth water... cream, flaked salt, chocolate chips, more butter, demerara sugar, etc.

Put butter in a light colored saucepan (dark pans like non-stick make it hard to tell when the butter browns) and heat over medium-high heat until it starts to brown. Add oatmeal and toast it in the butter... keep stirring so it doesn't burn. I let it go a couple of minutes. Add milk and water. Whisk in cocoa powder, salt, & sweetener. Turn down to very low once it starts to simmer. Let it cook quietly, stirring fairly often to prevent sticking, until it is done to your liking... it took me about 20 minutes. Top and enjoy!

145 calories and just under 20 g net carb per serving (for oats, milk, cocoa) + whatever sweetener you use + toppings.
