Dead simple dish that Mark from Scottsdale CC Culinary Arts program made for Bryce's Alchemy of Abundance retreat. But SO good!
For the sautéed squash I did a simple marinade of fresh herbs (basil, parsley,thyme) with minced garlic, olive oil and salt. Then to cook I started with butter, minced garlic. Cook until the garlic is aromatic and before it begins to brown I added diced tomatoes with a pinch of salt. Let that cook for 1-2 minutes then add the squash and cooked until tender over medium about 4-5 minutes. Adjust as needed with salt and pepper. Serve and enjoy. |
