Patatas Bravas Sauce

Recipe: 1 T vegetable oil
2 t garlic, minced to paste
1 t smoked paprika (sweet)
1/2 t kosher salt
1/8 t. cayenne
1/4 c. tomato paste (or half a small can)
1/2 c. water
2 t. sherry vinegar
1/4 c. mayonnaise

Heat oil in small saucepan over medium-low heat until shimmering. Add garlic, paprika, salt, & cayenne and cook until fragrant, about 30 seconds. Add tomato paste and cook another 30 seconds. Whisk in water and bring to a boil over high heat. Reduce heat to medium-low and simmer until slightly thickened, 4-5 minutes. Remove from heat and stir in vinegar. Cool completely. Whisk in mayonnaise. Serve at room temperature.

1.5 oz tomato paste
1 T mayo
2-3 t olive oil
1/2 t smoked paprika
1/4 t salt
Mix.
1 huge/2 small garlic cloves, crushed
