Fish with Artichokes & Capers

Recipe: A packet dinner that's mellow by our standards, but still super tasty! From (I believe) one of the Moosewood cookbooks.

For each packet:
1 4-6 oz fillet of some sort of mild whitefish (tilapia, cod, etc.)
1/2 c. onions, thinly sliced
1 c. mushrooms, sliced (a variety is nice)
1/2 c. thinly sliced artichoke hearts (I use plain frozen artichokes, but marinated would be tasty too)
1 t. capers
1 T olive oil
1-2 T lemon juice
1 t. Dijon mustard
1 t. dried thyme or 1 T fresh (that seems a lot)
good shake of salt & black pepper to your liking

Preheat oven to 450F. For each serving, tear a large piece of heavy-duty foil. Rinse the fish & pat dry. Place onions & mushrooms on foil. Top with fish and artichokes. Dress with remaining ingredients and fold packets up, sealing tightly. Place on baking sheet (with sides, just in case). Bake 20 minutes or until fish is flaky. (I've never NOT had it be done after 20 minutes in the oven and a couple minutes resting on the counter.) Be careful opening packets lest you get a face-full of steam (which will smell delicious, but you won't appreciate it one little bit).
