Asian - Thai, Indian, Vietnamese, Vegetarian (or easy fix)
Recipe:
I recently picked up a jar of Tikka Masala Simmer Sauce at Fry's (our local Kroger store -- Dillon's is yours) and it made a really fast, simple, TASTY Indian dinner.
Here's my "recipe" -- the jar seems small, but it makes a surprising amount...
8-12 oz chicken thighs, cut into small pieces
a little oil
1 large or two small onions, chopped into big pieces
1 eggplant, cut into 1/2"-3/4" dice
1 jar Private Selection Tikka Masala Simmer Sauce (Private Selection is the Kroger premium store brand)
Saute the chicken in a little oil in a large skillet. Add onions and eggplant and keep cooking until they're getting soft. Dump on the sauce and let it get bubbly and delicious. Serve over rice or cauliflower rice (below)

I got cauliflower rice from the paleo cooking world... dice cauliflower fine (I put it through the slicer attachment on my food processor) and fry briefly in a hot pan with a little oil or butter. Salt to taste... voila! Since cauliflower is a common ingredient in Indian curries, the flavor is a natural and makes for a great lower-carb option.
If you want to get a little fancier with rice or cauli-rice... heat the skillet, add a little oil and a couple of eggs... stir them around and cook until they're 75% done... dump them in a bowl. Add a little more oil and a half cup or so of fresh or frozen peas... fry until bright green and add to eggs. Now a bit more oil or butter and fry the cauliflower or rice until it's hot... hopefully you'll start to get a little color (but don't let it overcook if the color's not happening). Stir the eggs and peas back in. Salt to taste.
You could also add mushrooms &/or peas &/or cauliflower to the sauce part... raid the fridge and do what sounds yummy.
