Cherry Moos

Recipe: Cherry moos is a simple fruit pudding that my grandma used to make from the sour cherries that grew in her garden. I haven't had it in years, but got it in my head this morning that I wanted some... So I hunted up a few recipes from my grandma's family cookbook and a church cookbook from my hometown and was astonished at the amount of sugar in them. I remember it being quite sweet, but GOOD GRIEF! I knew my palate as it exists today wouldn't care for the original, so I took the sugar WAY down and matched up the best-sounding ideas from the recipes I had. It turned out pretty close to what I was craving.

1 can sour cherries packed in water
1/4 c. sugar or splenda
1/2 c. half & half
1/2 c. whole milk
1 T. flour
1/2 T. cornstarch
few drops almond extract (if you like)

Pour cherries in a small saucepan (do not drain) and bring to a simmer. Whisk flour and cornstarch into half & half and milk. When cherries are hot, add dairy. Stir until bubbly and a bit thickened. Remove from heat. Add almond extract once it's cooled a bit.
