Roasted Veggies and Bacon

Recipe: From the "Good grief, I can't believe it took me this long to try it!" files... (Actually from the Bacon Nation cookbook, with other veggies thrown in for good measure.)

Some collection of veggies that beg to be roasted. I've made it several times now. Some veg you might like (pick a few)...
1/3 head cauliflower, cut into 1-2" florets
10-12 Brussels sprouts, halved or quartered
1 small onion, cut in 1/2" slices
1 head garlic, broken into individual, peeled cloves
half a sweet potato, peeled and sliced into 1/4" disks
a couple carrots, peeled and sliced at an angle 1/4" thick
a handful or two green beans (whole, snapped)

2 T. olive oil
2-3 slices bacon, cut into 1/2" pieces
salt and pepper, to taste

Preheat oven to 400F. Line a jelly roll pan with foil (for easy cleanup). Prep veggies and toss on pan. Drizzle with oil and toss to coat. Season with salt and pepper and sprinkle with bacon. Put in oven and roast 15 minutes, toss, and return for another 15 minutes. Amaze yourself :-)
