Mushrooms Baked in Soy Sake Butter

1/2 lb. mushrooms, sliced (I like a mix... shiitake, enoki, shimeji, oyster, king oyster, button mushrooms have all worked well)
2 T. soy sauce
2 t. sake
1 T. mirin
1.5 T. butter, in pieces
1/2 t. shichimi (Japanese seven-spice shake-y goodness)

Tear a good long piece of heavy duty foil, large enough to wrap/seal all the ingredients. Pile on the mushrooms, top with remaining ingredients. Roll up two opposing sides and press to seal; roll up ends and press/seal.

COOKING OPTIONS:
OVEN: Preheat broiler. When hot, place packet about 8" from elements and broil about 10 minutes.

GRILL: Place over hot coals for about 10 minutes. Or over indirect heat for a bit longer.

STOVETOP: If gas, turn burner to lowest setting, place packet on grate over flame for 5-7 minutes or until packet is puffy and you can hear the liquid boiling.

SKILLET: Skip foil step. Heat large skillet over high heat. Melt butter and add mushrooms; fry for 3 minutes. Add soy sauce, sake, & mirin, simmer for another 2-3 minutes until cooked through. Top with shichimi.
