Mennonite/German/Russian, Side Dishes, Family/Childhood Foods
Recipe:
1 -2 cucumbers (English, hothouse, burpless, or about a pound of the tiny Persian ones... just not those dreadful waxed ones with big seeds)
1 T. salt
sour cream
ground black pepper
Slice cucumber very thinly (we peeled them when I was a kid, but I don't anymore)... 1mm or less if you have a good slicer. Put in a bowl of ice water with salt and stir up (there should be enough water to cover slices). Let sit for 5-20 minutes. Drain cucumbers and return to bowl. Add about 1/4-1/3 c. sour cream and a few shakes of black pepper. Stir until well-mixed and serve.
