It was Bryce who originally convinced me to try making this. It's WAY lower carb than mashed potatoes and, while not exactly the same, it's REALLY tasty. The first time I made it, I was sure I could just use the hand mixer like I do for potatoes. And... no. Once I got done cleaning the micro-florets off the cabinets I got out the food processor like my recipe suggested.
1 head cauliflower
1 head garlic, peel/trim cloves, but leave them whole
3 T. butter, sliced
salt
Cut cauliflower into florets. Peel stem and cut into 1/4" slices. Put cauliflower and garlic in a vegetable steamer and steam until soft. Put half in a food processor with the butter and begin processing. As it gets smooth, add rest of cauliflower and salt to taste. Process until smooth. Fin!
