Buffalo Cauliflower

Recipe: Suggested by our friend Bridget... then I couldn't wait and had to go searching for recipes online. Most were very similar and I don't recall exactly where this one came from.

1 head cauliflower, cut into small-ish florets (maybe 1" across)
5 T. hot sauce (the rather runny stuff you find in the Hispanic foods aisle... the original suggested Frank's Hot Sauce)
4 T. melted butter
1 T. white vinegar
1/2 t. garlic powder
salt & pepper to taste
2 c. panko
1/2 c Parmesan
olive oil or oil spray

Preheat oven to 400 F. Line baking sheet with parchment (I used a silicone baking mat). Mix hot sauce, butter, vinegar, garlic powder, salt and pepper in one small bowl. Put panko in another. Dip florets in sauce, then panko/Parmesan mix and spread out on baking sheet. Drizzle with a little olive oil or give a light spray. Bake for 20-25 minutes, or until browned.
