Shiitake Bacon

Not quite bacon... but pretty amazing nonetheless... I was convinced to at least TRY it when I saw the pics at: http://www.olivesfordinner.com/2013/03/shiitake-bacon.html

This recipe is a combo from a few sites:

8-10 shiitakes
1 t. liquid smoke
1 T. soy sauce or tamari
1.5 T. olive oil
1 t. sesame oil
1/2 t. salt

Remove stems and slice shiitakes thinly (about 1/8"). Put remaining ingredients in medium mixing bowl and whisk together (or just give a very convincing swirl, so oils and rest are reliably mixed). Add shiitakes and stir so they're all coated. Let marinate for 15-20 minutes. Preheat oven to 350F.

Turn shiitakes onto Silpat or parchment on baking sheet (all recipes suggested this; if you try it directly on a baking sheet, let me know how it goes) and spread into a single layer. Set timer for 10-15 minutes. Check and flip. Give 'em another 10 minutes... repeat until they're mostly dehydrated and starting to get a little crispy around the edges/look like those on the website given above.

Eat straight or toss onto a cream soup or top delightful little appetizer bites or make a Shiitake-Avocado-Tomato sandwich or ??? or...
