Tahini (Roasted)

Recipe: 1.5 lb sesame seeds (about 5 cups)
1/2 c. + 2T olive oil

[or any increment of 1 c. sesame seeds + 2 T. olive oil.]

Heat oven to 380 F. Put sesame seeds in jellyroll pan and roast, stirring every 5 minutes until the seeds are light golden (20 min? maybe more?). Let cool.

Put roasted seeds and oil in food processor (I had to do two batches for my mid-sized/7 c. processor). Process about 3 minutes, scraping down the sides after each minute. ....and.... you're done!

Makes about 3 cups tahini.
