1 lb. Brussels sprouts
1 medium onion
2 T. olive oil
salt & pepper, to taste
1/3 c. parmesan cheese
Preheat oven to 425 F.
Rinse sprouts, trim cut end and remove very dark green leaves. Slice a scant 1/4" thick. Slice onion the same thickness. Break into rings and toss on a jelly-roll pan with oil, salt, & pepper. Roast 10-12 minutes. Toss and return for another 3-4 minutes if desired. Remove and put in bowl; toss with cheese.
