An entirely unlikely recipe on the face, but it turns out stunningly bread-like...
1 c. (260 g) almond butter (I'm told peanut butter works too)
3 eggs
1 T. vinegar
1/2 t. baking soda
1/4 t. salt
2 T. splenda or sugar or to taste*
Preheat oven to 350 F and spray oil an 8.5" x 4.5" loaf pan.
Blend almond butter and eggs until smooth. Add in remaining ingredients (I put in soda, salt, & sugar first, mixed; then added in vinegar and mixed again). Pour into loaf pan and smooth top. Bake 30-40 minutes, until bamboo skewer (or toothpick) comes out clean. Let cool before slicing.
* The original recipe called for an optional packet of stevia. I used 2 T. splenda for my first attempt (a breakfast loaf)... it had a hint of sweetness, but wasn't SWEET. Adjust to your taste... I suspect it would be perfectly savory without any added sweetner, or could be turned into a nice cinnamon raisin bread if you amped it up. |
