An approximate recipe from my friend Sylvia (who also thinks it tastes kind of like fried chicken... and I have to agree with her!):
11 oz ground garbanzo bean flour (about 1 1/2 c.)*
3 c. water
3 T. olive oil
1 t. salt
about 1 t. dry rosemary, crushed
Put a large (14"?) cast iron skillet in a 500 F oven and allow to heat.
Whisk flour, water, & rosemary together in a bowl so there are no lumps. Remove pan and add oil, swirling it around. Pour in batter and put back in oven. Bake 15 minutes with the door closed, then another 8-15 minutes with the door open. Top should be getting lightly browned & crispy; inside should be creamy. Turn onto a plate, cut and enjoy with a little butter, and/or honey, or straight-up.
* Sylvia put her flour in a SERIOUS blender and whirred the heck out of it to make it really fine... she says the interior will be almost the texture of flan if you get it it fine enough. |
