A good German/Russian soup from my childhood. Sounds simple enough, but the cream and dill utterly transform it.
1 stewing chicken (or a couple of breasts, diced, and some stock)
1 large onion, chopped
4 medium potatoes, chopped
1 medium head cabbage, chopped
1 pint canned tomatoes
salt to taste
3/4 c. cream or sour cream
2 t. dill
Cook chicken in stockpot until tender. Pull meat off bones and chop. Return to stockpot and add potatoes and onions. Cook until starting to soften. Add cabbage and tomatoes and cook until done. Season with salt along the way. Add (sour) cream and dill just before serving.
