Eugene's Roast Potatoes

Recipe: red potatoes
olive oil
salt & pepper
garlic
mint

Heat oven to 450 F.

Chop potatoes into bite-sized pieces. Put in large bowl and toss with olive oil, salt, & pepper. Place on jellyroll pan and roast until potatoes are browned on the outside and soft through (about 50 minutes; turn them halfway through baking). Return potatoes to bowl and toss with garlic & mint. Taste and adjust seasoning if needed.
