I GREW UP on this sausage... it's simple, but SO good! When purchased from Anderson's grocery store, it's in the casing, but tastes just as good made into patties.
1 lb. ground pork*
4 t. liquid smoke
1 1/2 t. kosher salt
1 t. black pepper
Mix up in a bowl, squeezing and folding over with your hand is probably the easiest way. Make patties and fry them over medium heat. I start with a lid on to get them going, then take the lid off when I flip them so the liquid can evaporate and the get brown and tasty. Maybe flip once more to brown the other side.
*I've made it with ground chicken thighs to accommodate friends who don't eat pork... and it's virtually indistinguishable from the original.
*I've also made it with super lean ground chicken breast. You then need a little water in the skillet to start (if your motivation is super low-fat) and it's not as rich and a little dry, but still quite good. I imagine a little olive oil (try 2-3 t. to start) in the skillet and/or mixed into the meat would help.
