2 half chicken breasts, diced OR a pound of chorizo
2 onions, sliced pole-to-pole
about 2 c. enchilada sauce**
1 cube harissa (see "Misc." recipes), optional
12 oz. cottage cheese
4-8 oz cheese (pepper jack, cheddar, whatever...), shredded
1 pkg corn tortillas
Preheat oven to 350 F. Brown chicken (or chorizo) and onions. Stir in enchilada sauce & harissa. In another bowl mix cottage cheese & cheese.
In an oblong baking dish, start with a thin layer of mostly enchilada sauce (not much chicken or onion). Then layer on:
tortillas (can cut in half or quarters to make them fit better), half the cheese, half of remaining chicken, another layer of tortillas, rest of cheese, rest of chicken.
Bake uncovered for 30 minutes.
** If you get a BIG can, you can split it and use the rest for a batch of mole. Or just get a 19 oz can and use it all. You can also make your own... recipe in this section.
