Blueberry Applesauce Muffins

Recipe: 1 1/4 c. all purpose flour
1/2 c. oat bran
1/4 c. wheat bran
2 t. baking powder
3 T. melted butter
2 T. honey
1/4 c. sugar or splenda
1 large egg, beaten
2/3 c. milk
1/2 c. unsweetened applesauce
1 t. vanilla
1 c. fresh blueberries

Preheat oven to 350 F. Grease muffin tins. Combine dry ingredients. Combine butter & honey and mix well. Whisk in sugar/splenda, egg, milk, applesauce, & vanilla. Add to dry ingredients and mix just until combined. Fold in blueberries. Spoon into muffin tin. Bake 20-25 min.

Makes 12 muffins. Made with splenda, about 16 g net carb/muffin.
