salmon fillets
fresh thyme
olive oil
coarse salt
prosciutto
Preheat oven to 350 F.
Grind thyme and salt in mortar and pestle. Add a bit of olive oil. Pour over/rub into salmon. Wrap fillets with 2 slices prosciutto. Brush a bit more olive oil on prosciutto (you want it to crisp up as it bakes). Bake about 10 minutes, then turn on broiler for additional 2-3 minutes.
