1/4 c. Splenda
1/4 c. brown sugar
2 eggs
5 T. melted butter
1 t. vanilla
2 grated apples (1.5 - 2 c.)
3/4 c. flour
3/4 c. whole wheat flour
1/4 c. oat bran
2 t. baking powder
1 t. ground cinnamon
1 t. baking soda
1/2 t. salt
1/2 c. walnut pieces
Preheat oven to 350 F. Cream Splenda, brown sugar, & eggs. Stir in melted butter, vanilla, & apples. Mix remaining dry ingredients together and stir briefly into wet. Spoon into muffin papers. Bake 14-16 minutes.
Makes 15 muffins with 17 g carb (net) each.
