Indian Green Beans with Onion Paste

Recipe: 1 medium onion, coarsely chopped
4 cloves garlic
1" piece of ginger, peeled and sliced
1-2 tomatoes

1/2 t. turmeric
2-3 T. vegetable oil
2 t. ground coriander
1 t. ground cumin
1/4 t. Indian chili powder
1/2 t. whole cumin seeds
1/2 t. whole black mustard seeds

1 1/2 lb green beans

1 t. salt
2 t. lemon juice

Blend onion, garlic, ginger, & tomatoes to a paste in a food processor. Heat oil in a large skillet. Add paste and fry about 5 minutes, adding water as necessary to prevent sticking. Add coriander, cumin, chili powder, cumin seeds, and mustard seeds and cook another 5 minutes, again adding water if needed. Add beans and cook 5 minutes; turn down heat, add salt and lemon juice. Cover and cook until beans are done (about 30 minutes), stirring occasionally.
