1 1/2 medium/large onions, chopped
5 cloves garlic
1 T. minced ginger
3 T. water

1 1/2 t. ground coriander
1/2 t. ground cumin
1/4 t. turmeric

2-4 chopped tomatoes

1 1/2 lb. ground lamb
1 t. salt

3/4 turmeric
1 1/2 t. salt
3 T. brown sugar
1/3 c. water
6 oz can tomato paste
Blend onion, garlic, ginger, & 3 T. water to a paste in a food processor. Pour in a skillet with a little oil and cook 10 minutes, adding a little more water as necessary to keep from sticking. Add coriander, cumin, & turmeric and cook another 5 minutes. Add chopped tomatoes and cook another few minutes. Add lamb** and salt, turn up heat and cook until lamb is done. Add remaining turmeric, salt, brown sugar, 1/3 c. water, and tomato paste. Cook until flavors come together.
**If lamb is fatty, fry and drain before adding to main dish.
