1/3 c. flour
2 1/2 c. unsweetened shredded coconut
1/8 t. salt
2/3 c. sweetened condensed milk
1 t. vanilla
Preheat oven to 350 F. Grease cookie sheet or use silicone mat.
Mix flour, coconut, salt. Pour milk and vanilla over top and stir well. Drop onto cookie sheets (recipe suggested 1/4 cupfuls, I used 1 tablespoonfuls) about 1" apart. Bake until golden (20 min for big cookies; less for small). Remove to cooling racks immediately.
I like them fresh out of the oven when the outside is a little crispy. Once you pack them up and wait a bit, they'll become chewy all through.
