Tam's Moussaka

Recipe: 1 pound new potatoes
3 small eggplant
salt
20 oz ground turkey or lamb
1 T. dried parsley
1/8 - 1/4 t. ground nutmeg
salt and pepper
1 pkg sliced mushrooms
1 14.5 oz. can tomatoes
half jar of pasta sauce (optional)
1/4 c. balsamic vinegar or red wine
4 eggs
1/2 c. milk

Ahead of time steam new potatoes.

Preheat oven to 375 F.

Slice eggplant thinly on the diagonal. Sprinkle with salt and let sit in nonreactive bowl.

Brown turkey in a bit of olive oil and season. Add mushrooms, tomatoes, balsamic vinegar and cook until mushrooms are yummy.

Rinse salt off eggplant and squeeze dry.

Assemble in baking dish (bigger than 10"x10"):
Potatoes
half of burger mixture
eggplant
remaining half of burger mixture

Bake 40-45 minutes. Beat together 4 eggs and 1/2 c. milk. Pour eggs over top and bake another 15 minutes. Let rest 5-10 minutes before serving.
