...Try it in Udon with Roast Chicken (under Asian - Japanese etc.)

...Make a quick chicken salad: To about a half breast's worth of chicken (maybe 1 to 1.5 cups meat) add 2 chopped hard cooked eggs, a few chopped pieces of marinated artichoke hearts, celery (if you like it), a tablespoon or two of the roasting liquid, and 2-3 T. mayo. Alternately, use the dressing from Winter Greens with Caper/Tomato Vinaigrette under Side Dishes. Mmmmmm!!

...Make quesadillas: Put a lightly buttered tortilla (butter side down) in a hot skillet. Spread a little chicken, salsa, (grilled or sauted onions and/or peppers if you've got the time) and cheese on the tortilla, and top with a second butter-side up tortilla. Sprinkle on a little garlic salt. Brown, flip and brown the other side. Slide on a plate and cut with a pizza cutter.
I find I have the most luck flipping it if I slide it out onto a plate, then flip the skillet over the plate, put on two good oven mitts, grab the plate/skillet combo and give it a quick flip so the quesadilla lands in the pan.

... Make Greek-Mex quesadillas: Make filling with meat from 1 (large) or 2 (small) smoked thighs, 1 mashed up avocado, some goat cheese; top with pickled onions

... Make grown up mac & cheese: Cook up 1/4-1/2 lb of your favorite pasta. Make a 3/4 cup of white sauce: combine 1.5 T. flour & 1.5 T. butter in a small saucepan, heat and stir until bubbly. Add 3/4 cup liquid (either all milk or up to 1/4 c. liquid from chicken & milk to make 3/4 c.) and heat/stir until it thickens. Add your choice of (up to 3/4 c.) of: grated parmasan, mozzeralla, and/or sharp cheddar cheese. Pesto is good to add as well. Stir until melted & smooth. Drain pasta, add some chicken and the cheese sauce, stir. You can either eat it now or put in casserole, top with buttered bread crumbs and bake til top is toasty.
