2 c. flour
1 t. baking powder
1/4 t. salt
1/3 c. sugar
1/4 c. cold butter, cut into pieces
1/2 c. milk
1/2 c. dried currants
1 egg yolk beaten with 1 t. water, for glaze
Preheat oven to 375 F. Grease and flour a heavy baking sheet.
Sift together flour, baking powder, salt, and sugar. Cut in butter until mixture resembles a fine meal. Mix in currants. Make a well and add milk. Quickly mix with a rubber spatula... do not overmix. Turn out onto floured counter and form into 10"-12" round. Put on pan, brush with yolk, sprinkle with sugar. Score into 10 wedges. Bake until golden (18-20 minutes). Transfer to wire rack and serve warm with butter
