Recipe: 1 egg
1 T. milk or half & half
1/2 c. bread crumbs
3/8 c. grated parmesan
garlic salt
4 3/4" thick slices of pork loin
salt and freshly ground black pepper
olive oil

Whisk eggs and milk or half & half, place in a shallow bowl. Place breadcrumbs, parmesan and garlic salt to taste in another bowl. Heat skillet large enough to hold all four pork slices with a bit of olive oil over medium heat. Salt and pepper pork. Dip into egg mixture, then bread crumb/parmesan (pat to make sure it sticks). Put into skillet and fry until golden; when ready to turn, drizzle a bit more olive oil on the uncooked sides of chops and turn. Brown the other side. Check for doneness and serve.
