1/2 c. shortening (scant) [75 g if using a scale]
2 c. flour
1 T. sugar
1 T. baking powder
1 t. salt
2/3 c. milk
Heat oven to 450 F. Mix flour, sugar, baking powder, salt. Cut in shortening. Add not quite all the milk; stir with a fork; add more milk if needed to make a not-too-sticky dough. Put a bit of flour on the counter, turn out the dough and knead 8-10 times. Flatten to about 3/4 inch thick and cut 12 biscuits. Bake 9-12 minutes until lightly browned.

1/3 c. shortening
1 3/4 c. flour
2 1/2 t. baking powder
3/4 t. salt
1/2 - 3/4 c. almond milk
Construct as above.
