Recipe: The Fish:
½ - 1 lb. fish – cod or some sort of whitefish
milk
salt
breadcrumbs
olive oil

Preheat oven to 450-500° F. Clean fish. Dip in milk, salt lightly, and dredge in breadcrumbs. Lay in baking dish. Lightly spray breaded fish with olive oil. Bake about 10 minutes (depends on thickness of fish) til done.


The Sauce:
2-3 T. olive oil
1 T. flour
3-4 cloves garlic, chopped
1 can (Del Monte) diced tomatoes with basil, garlic, and oregano
¼ c. red wine vinegar
1-2 t. fresh rosemary, chopped
1-2 t. oregano (fresh if you’ve got it, dried if not)
1-2 t. sugar
salt and fresh ground pepper to taste

Heat olive oil in a skillet. Add flour and stir vigorously with wooden spoon until flour turns lightly golden. Add garlic, tomatoes, vinegar, and herbs. Stir once or twice, reduce heat and season with salt, pepper, and sugar. Cover, turn down heat and simmer for 15-20 minutes, stirring occasionally.

Serve the sauce over the fish, garlic bread, and anything else that happens to be on your plate – this sauce is tasty, man!
