Brisket - whole flap (16 lbs, Christmas 2024*)
Liquid smoke (mesquite, this time)
Lawry’s
Tenderizer
Worchestershire
Garlic - minced
Red wine (about 1/3 bottle)
Trim larger chunks of fat.
Cover in foil.
Start at 225F.
Get up in middle of night and up it to 250F. Total time in oven 8-9 hours.
Scrape remaining fat off with fork. Slice.
* There were 2 briskets made, in addition to spiral ham… that’s how you do it in the Midwest! |
