Recipe: The original recipe had these made to go on a grilled turkey sandwich. While I would absolutely try that... I also thought they sounded good enough to just nibble on. And they ARE!

1 c cider vinegar
1 spoon honey (original called for 1/4 cup... I probably used 1T)
1/2 t salt

1 big, crisp apple, cut in quarters, cored and sliced thinly (mine were about 3/16" on the skin side)

Mix vinegar, honey, and salt in a glass or other non-reactive container. Warm in microwave as needed to dissolve the honey. Let cool to room temp (or stick in fridge in 2 cup wide-mouth canning jar). Add apples to bowl (or jar) and let sit 10 minutes. Remove apples and eat or store in another glass jar.

Original recipe said vinegar mixture can be used to make three batches. I've done two and it's going strong. For the second batch I used the vinegar mixture cold and it was perfect!

*The original recipe had you heat the vinegar to "bubbling" and put the apple in for 5 minutes, then remove them. The slices were thin enough that they were half cooked by the end and had lost their crunch. If that sounds better to you, do it that way!
