Title: Salade au Chevre Chaud (Salad with Warm Goat Cheese Toasts)

Recipe: One of our favorite date night spots has THE MOST AMAZING goat cheese salad. This doesn't rise to their level, but it's pretty darn good and easy to get on the table....

Two servings
It sounds like a lot of greens, but once you toss them with the dressing, it de-fluffs :-)

Dressing
2 tablespoons of champagne or cider vinegar
1 clove garlic finely minced
1/4 teaspoon cane sugar
1 heaping teaspoon grainy Dijon mustard
3 tablespoons of olive oil
Sea salt and coarsely ground black pepper to taste
Put in a jar and shake to combine... or whisk in a small bowl.

Salad
3 c arugula
3 c mache/corn salad/lamb's lettuce (or if you can't get your hands on this divine green, another green of your choice)
few cherry tomatoes, halved
4 slices baguette, toasted
4 slices goat cheese, about 1/2" thick
4 slices good bacon, fried to your liking
handful of pine nuts

Put goat cheese on baguette slices and put under broiler for a minute or two to warm and barely toast the top of the cheese.

Toss the greens and tomatoes with the dressing and put on two plates. Top with crossed bacon slices and sprinkle with pine nuts. Put two goat cheese toasts on the side. Enjoy salad and smooches (still date night :-).

To be truer to the original:
Use all arugula (if it's not too strong).
Their dressing is probably lemon-based (rather than vinegar), but this is the recipe I found and think it works well... I may play with it later.
Drizzle with a little honey at the table.
