For one serving:
1 slice whole grain bread, toasted
1/2 small avocado, mashed and seasoned with salt & pepper
2 T grated cheddar cheese (smoked is extra nice)
1 egg
1-2 T kimchee, coarsely chopped
Spread avocado on toast and sprinkle with cheese. Put under broiler or in toaster oven to melt cheese.
Fry egg to your liking. Place on toast and top with kimchee.
