2 t. paprika
4 t. thyme
2 t. onion
2 t. garlic
1 T. sugar
2 t. salt
2 t. black pepper
2 t. ground red pepper
1 t. Italian seasoning
1 t. cumin
1/2 to 3/4 t. nutmeg
Put in plastic container and shake.
FISH
1 lb. tilapia, rinsed and patted dry
a little olive oil
blackening seasoning (above)
Preheat oven to 425 F. Brush a little olive oil on baking pan. Lightly dredge fish in blackening seasoning and place on baking pan. Drizzle with a little more olive oil. Bake until fish is done and flaky (around 10 minutes, give or take).
SAUCE (makes lots)
1/4 c. mayonnaise
3/4 c. sour cream
4 t. dried onion flakes
1.5 t. salt
1 t. smoked paprika
1/2 t. garlic powder
2 t. sriracha
Mix up early if you can and let sit in the fridge awhile so onions can rehydrate and flavors meld.
