Recipe: 2½ c. sushi rice
2¾ c. water

¼ c. rice wine vinegar
3 T. sugar
1½ t. salt

Wash rice until water is clear. Drain. Add water and steam.
Mix vinegar, salt, sugar. Sprinkle over rice while stirring rice with paddle. Let steam escape and rice cool to close to room temperature.
