Title: Sweet and Sour Sauteed Red Cabbage

Recipe: Adapted from Rachael Ray's 30 minute meals

Ingredients:

1/2 head red cabbage, shredded or cut into strips
2 T olive oil
1/3 - 1/2 c. white vinegar
1 T sugar or sugar substitute equivalent

Directions:

Heat olive oil over medium heat, and add cabbage, turning over a few times to get everything coated. Let cook for about 3-4 minutes.

Add vinegar, and turn cabbage around again. Then add sugar.

Let cook for another 10 minutes or until the cabbage is tender.

**Adjust vinegar/sugar ratio to your tastebuds! I like the vinegary bite, so you might want to add a bit more sweetness...
