1 lb. shredded green papaya
6 cloves garlic
2 dried chilis, seeds removed
1 T. brown sugar
2 T. fish sauce
juice from one gigantic lime (maybe 1/4 c.)
1/3 c. roasted peanuts, crushed

Put chilis and garlic in large heavy mortar and pestle and pound to bits. Add sugar and fish sauce and mix more. Toss with lime juice and papaya. You're done! Sprinkle peanuts on top as you serve.

*The original recipe also included 4 large cherry tomatoes (crushed as they're mixed in) and 1/3 c. green beans, cut into 2" lengths (cooking them was not mentioned).
